SPAGHETTI WITH CLAMS AND CILANTRO SAUCE

INGREDIENTS

For the sauce

  • 2 garlic cloves
  • 2 tablespoons of halved walnuts
  • 2 tablespoons of grated parmesan cheese
  • 1/2 cup of cilantro leaves
  • 2 teaspoons of olive oil
  • A pinch of black pepper
  • 1/2 cup of heavy cream

For the pasta

  • 2 L of water
  • 1 teaspoon of salt
  • 200 g of La Moderna® Spaghetti
  • 1 tablespoon of unsalted butter
  • 2 minced garlic cloves
  • 1/2 finely chopped onion
  • 2 tablespoons of finely chopped lemon grass
  • 200 g of fresh, rinsed, and cleaned white clams
  • 1/2 cup of fish broth or water
  • 2 tablespoons of washed, disinfected, and chopped cilantro leaves

INSTRUCTIONS

For the sauce

  1. 1 Blend all the ingredients until smooth and homogeneous; set aside.

For the pasta

  1. Heat the water and salt in a tall pot until it boils.
  2. Immediately add La Moderna® Spaghetti and cook until it is al dente (soft on the outside and firm on the inside).
  3. Check the cooking times indicated on the package; drain and set aside.
  4. Melt the butter in a pan and cook the garlic, onion, and lemon grass, stirring until softened.
  5. Add the clams and broth.
  6. Cover the pan and cook over medium heat until the clams open.
  7. Add the pasta to the pan, incorporate the sauce and stir to integrate all the flavors.
  8. Heat for 2 more minutes over medium heat.
  9. Serve immediately and decorate with chopped cilantro.
