INGREDIENTS
For the sauce
- 2 garlic cloves
- 2 tablespoons of halved walnuts
- 2 tablespoons of grated parmesan cheese
- 1/2 cup of cilantro leaves
- 2 teaspoons of olive oil
- A pinch of black pepper
- 1/2 cup of heavy cream
For the pasta
- 2 L of water
- 1 teaspoon of salt
- 200 g of La Moderna® Spaghetti
- 1 tablespoon of unsalted butter
- 2 minced garlic cloves
- 1/2 finely chopped onion
- 2 tablespoons of finely chopped lemon grass
- 200 g of fresh, rinsed, and cleaned white clams
- 1/2 cup of fish broth or water
- 2 tablespoons of washed, disinfected, and chopped cilantro leaves
INSTRUCTIONS
For the sauce
- 1 Blend all the ingredients until smooth and homogeneous; set aside.
For the pasta
- Heat the water and salt in a tall pot until it boils.
- Immediately add La Moderna® Spaghetti and cook until it is al dente (soft on the outside and firm on the inside).
- Check the cooking times indicated on the package; drain and set aside.
- Melt the butter in a pan and cook the garlic, onion, and lemon grass, stirring until softened.
- Add the clams and broth.
- Cover the pan and cook over medium heat until the clams open.
- Add the pasta to the pan, incorporate the sauce and stir to integrate all the flavors.
- Heat for 2 more minutes over medium heat.
- Serve immediately and decorate with chopped cilantro.
