For the noodles
- 1 200g package of Fideo no. 0 La Moderna®
- 1 tomato, seeded
- 1 garlic clove
- 1/4 onion
- 2 liters of chicken broth
- 3 tablespoons of vegetable oil
- salt and pepper to taste
For the garnish
- 200g of pork rinds, cut into pieces
- 2 dried pasilla chilies, fried and cut into rings
- 1 avocado, diced
- 200g of panela cheese, diced
- 2 tablespoons of cream
- Blend the onion, garlic, and tomato into a paste, strain it and fry it in a pot with a little oil. Let it cook for a few minutes and mix occasionally.
- Add the chicken broth, bring to a boil, and add the noodles. Let it cook for the time indicated on the package or until the noodles are al dente, add salt to taste.
- Serve hot and accompany it with the garnish.
