For the vinaigrette:
- 6 tablespoons of olive oil
- 2 tablespoons of balsamic vinegar
- 1/2 tablespoon of lemon juice
- 1 tablespoon of honey
- A pinch of salt and ground black pepper
For the pasta:
- 2 L of water
- 1/2 teaspoon of salt
- 200 g of Macaroni La Moderna®
- 1 cup of seedless red grapes, halved
- 1 cup of seedless green grapes, halved
- 1/2 cup of pitted black olives
- 1/2 cup of pitted green olives
- 1/2 cup of toasted and halved almonds
- 2 tablespoons of gorgonzola cheese
For the vinaigrette:
- Mix all the ingredients in a glass jar with a lid and shake vigorously to form an emulsion.
- Set aside.
For the pasta:
- Heat the water with the salt in a pot until it boils.
- Immediately add the Macaroni La Moderna® pasta and cook until al dente.
- Drain and let cool completely.
- Combine the pasta with the remaining salad ingredients in a bowl, add the vinaigrette and stir to incorporate the flavors.
- Serve and enjoy.
