Pasta salad with grapes and olives

For the vinaigrette:

  • 6 tablespoons of olive oil
  • 2 tablespoons of balsamic vinegar
  • 1/2 tablespoon of lemon juice
  • 1 tablespoon of honey
  • A pinch of salt and ground black pepper

 

For the pasta:

  • 2 L of water
  • 1/2 teaspoon of salt
  • 200 g of Macaroni La Moderna®
  • 1 cup of seedless red grapes, halved
  • 1 cup of seedless green grapes, halved
  • 1/2 cup of pitted black olives
  • 1/2 cup of pitted green olives
  • 1/2 cup of toasted and halved almonds
  • 2 tablespoons of gorgonzola cheese

 

For the vinaigrette:

  1. Mix all the ingredients in a glass jar with a lid and shake vigorously to form an emulsion.
  2. Set aside.

 

For the pasta:

  1. Heat the water with the salt in a pot until it boils.
  2. Immediately add the Macaroni La Moderna® pasta and cook until al dente.
  3. Drain and let cool completely.
  4. Combine the pasta with the remaining salad ingredients in a bowl, add the vinaigrette and stir to incorporate the flavors.
  5. Serve and enjoy.
