INGREDIENTS
For the soup
- 2 tablespoons unsalted butter
- 3 garlic cloves, finely chopped
- 1/4 finely chopped onion
- 2 thinly sliced zucchinis
- 200 g of La Moderna® No.1 Noodle
- 5 cups of fat-free, salt-free chicken or vegetable broth
- 2 fresh thyme sprigs
- 1 parsley stem
- 1 pinch of salt and black pepper
For serving
- 4 tablespoons washed, disinfected and chopped parsley
- 2 tortillas, julienned and baked
INSTRUCTIONS
For the soup
- Melt the butter in a pot, brown and lightly sauté the garlic and onion.
- Add the zucchinis and cook them until they have a light golden hue.
- Remove from the pot and set aside.
- Add the La Moderna® No.1 Noodle to the pot and lightly toast with the remaining butter.
- Add the broth, thyme, parsley, salt, and pepper.
- Cook over medium heat for 8 to 12 minutes or until the pasta is soft.
For serving
- Serve the soup hot and top with a portion of roasted zucchinis; decorate with parsley and julienned baked tortilla.
