NOODLE SOUP WITH SQUASH AND TORTILLA

INGREDIENTS

For the soup

  • 2 tablespoons unsalted butter
  • 3 garlic cloves, finely chopped
  • 1/4 finely chopped onion
  • 2 thinly sliced zucchinis
  • 200 g of La Moderna® No.1 Noodle
  • 5 cups of fat-free, salt-free chicken or vegetable broth
  • 2 fresh thyme sprigs
  • 1 parsley stem
  • 1 pinch of salt and black pepper

For serving

  • 4 tablespoons washed, disinfected and chopped parsley
  • 2 tortillas, julienned and baked

INSTRUCTIONS

For the soup

  1. Melt the butter in a pot, brown and lightly sauté the garlic and onion.
  2. Add the zucchinis and cook them until they have a light golden hue.
  3. Remove from the pot and set aside.
  4. Add the La Moderna® No.1 Noodle to the pot and lightly toast with the remaining butter.
  5. Add the broth, thyme, parsley, salt, and pepper.
  6. Cook over medium heat for 8 to 12 minutes or until the pasta is soft.

For serving

  1. Serve the soup hot and top with a portion of roasted zucchinis; decorate with parsley and julienned baked tortilla.
  2. Enjoy!
