FETTUCCINE WITH SPANISH CHORIZO AND TOMATO SAUCE

INGREDIENTS

  • 200 g of Fettuccine La Moderna®
  • 2 tablespoons of olive oil
  • 1/2 small onion finely chopped
  • 2 cloves of garlic finely chopped
  • 300 g of Spanish chorizo finely chopped
  • 1/2 cup of tomato puree
  • 2 cups of yellow cherry tomatoes
  • 1/2 cup of roasted peanuts
  • 1/4 cup of parmesan cheese
  • Basil leaves to decorate
  • Salt and pepper to taste

PREPARATION

  1. Cook the pasta according to the package instructions.
  2. Drain and set aside.
  3. Heat olive oil in a pan, add the onion, wait until it changes color and add garlic, when it is golden, incorporate the chorizo.
  4. Cook until the chorizo is fully cooked.
  5. Then add the tomato puree and check the seasoning.
  6. Add the cooked pasta to the chorizo sauce and sauté for a few minutes just to integrate the ingredients.
  7. To serve, pour the pasta onto a platter and add the halved yellow cherry tomatoes as a garnish, peanuts, cheese, and basil leaves.
