INGREDIENTS
- 200 g of Fettuccine La Moderna®
- 2 tablespoons of olive oil
- 1/2 small onion finely chopped
- 2 cloves of garlic finely chopped
- 300 g of Spanish chorizo finely chopped
- 1/2 cup of tomato puree
- 2 cups of yellow cherry tomatoes
- 1/2 cup of roasted peanuts
- 1/4 cup of parmesan cheese
- Basil leaves to decorate
- Salt and pepper to taste
PREPARATION
- Cook the pasta according to the package instructions.
- Drain and set aside.
- Heat olive oil in a pan, add the onion, wait until it changes color and add garlic, when it is golden, incorporate the chorizo.
- Cook until the chorizo is fully cooked.
- Then add the tomato puree and check the seasoning.
- Add the cooked pasta to the chorizo sauce and sauté for a few minutes just to integrate the ingredients.
- To serve, pour the pasta onto a platter and add the halved yellow cherry tomatoes as a garnish, peanuts, cheese, and basil leaves.
