CREAMY CHIPOTLE CHICKEN PASTA

INGREDIENTS

  • 2 packages of 200 g Spiral La Moderna® pasta
  • 4 L of water
  • 4 cups of chicken breast cubes
  • 2 tbsp of oil
  • 2 cups of spinach leaves
  • 3 tomatoes, boiled
  • 1/4 onion
  • 1 garlic clove
  • 1 cup of cream
  • 1 tbsp of chipotle puree in adobo sauce
  • 150 g of grated manchego cheese
  • Salt and pepper to taste

INSTRUCTIONS

  1. Boil the water and cook the Spiral La Moderna® pasta according to package instructions.
  2. Drain and add a tablespoon of olive oil. Mix and set aside.
  3. Season the chicken with salt and pepper, and sear in a pan with oil. Cook for 5 minutes.
  4. Add the spinach and sauté for 3 minutes. Set aside.
  5. Blend the tomatoes with onion, garlic, cream, and chipotle.
  6. Strain the tomato sauce and pour it over the chicken and spinach. Adjust seasoning and cook for 5 minutes.
  7. Add the pasta, mix well and cook for an additional 5 minutes.
  8. Serve and sprinkle with grated manchego cheese.
