For the pasta

  • 200 g of Rotini La Moderna®
  • 3 tablespoons of olive oil
  • 1/2 finely chopped onion
  • 2 cups of boiled and shredded chicken (can be roasted chicken)
  • 1/2 cup of achiote dressing
  • 1/4 cup of orange juice
  • 4 cups of chopped romaine lettuce
  • 1 cup of chopped mango
  • 1 cup of chopped pineapple
  • 1 cup of chopped avocado
  • 3 tablespoons of chopped cilantro
  • 1/2 cup of chopped red onion
  • The juice of 4 lemons
  • Dried and ground oregano to taste
  • Salt and pepper to taste

For the dressing

  • 1/4 cup of citrus juice mixture (lemon, orange and grapefruit)
  • 1/2 cup of olive oil
  • Salt and pepper to taste
  • To serve
  • Croutons
  • Toasted and chopped nuts


  1. Cook the pasta according to the package instructions, drain and set aside.
  2. In a skillet, heat the oil and add the onion. Once it changes color, add the chicken and the achiote dressing.
  3. Cook until the ingredients are perfectly mixed and add the orange juice. Set aside.
  4. In a large bowl, place the lettuce, mango, pineapple, avocado, cilantro, and chicken. Mix until all ingredients are integrated.
  5. Place the onions in a small bowl, add the lemon and oregano, season with salt and pepper, and set aside.
  6. Serve the dressing ingredients in a glass with a lid and shake until all ingredients are integrated.
  7. Serve the salad at room temperature, accompany with pickled onions, dressing, and finally the croutons and nuts.
