For the pasta
- 200 g of Rotini La Moderna®
- 3 tablespoons of olive oil
- 1/2 finely chopped onion
- 2 cups of boiled and shredded chicken (can be roasted chicken)
- 1/2 cup of achiote dressing
- 1/4 cup of orange juice
- 4 cups of chopped romaine lettuce
- 1 cup of chopped mango
- 1 cup of chopped pineapple
- 1 cup of chopped avocado
- 3 tablespoons of chopped cilantro
- 1/2 cup of chopped red onion
- The juice of 4 lemons
- Dried and ground oregano to taste
- Salt and pepper to taste
For the dressing
- 1/4 cup of citrus juice mixture (lemon, orange and grapefruit)
- 1/2 cup of olive oil
- Salt and pepper to taste
- To serve
- Croutons
- Toasted and chopped nuts
PREPARATION
- Cook the pasta according to the package instructions, drain and set aside.
- In a skillet, heat the oil and add the onion. Once it changes color, add the chicken and the achiote dressing.
- Cook until the ingredients are perfectly mixed and add the orange juice. Set aside.
- In a large bowl, place the lettuce, mango, pineapple, avocado, cilantro, and chicken. Mix until all ingredients are integrated.
- Place the onions in a small bowl, add the lemon and oregano, season with salt and pepper, and set aside.
- Serve the dressing ingredients in a glass with a lid and shake until all ingredients are integrated.
- Serve the salad at room temperature, accompany with pickled onions, dressing, and finally the croutons and nuts.
