BASQUE STYLE PASTA

INGREDIENTS

  • 200 g of La Moderna® Spiral Pasta
  • 4 tablespoons of olive oil
  • 1 small onion, finely chopped
  • 3 garlic cloves, finely chopped
  • 4 tomatoes, finely chopped and skin removed
  • 1 1/2 cup of tomato puree
  • 1 cup of cubed and cooked potatoes
  • 2 cans of tuna in water, drained
  • 1/2 cup of peeled and chopped almonds
  • 1/2 cup of finely chopped parsley
  • Salt and pepper to taste
  • Parsley leaves for garnish

INSTRUCTIONS

  1. Cook La Moderna® Spiral Pasta according to package instructions.
  2. Drain and set aside.
  3. Heat the olive oil in a large pan.
  4. Add the onion and cook until it changes color, then add the garlic and cook until it browns.
  5. Incorporate the tomato, puree and cook covered over low heat for about 10 minutes.
  6. After that time, add the potatoes, tuna, almonds, olives, chili and parsley.
  7. Season with salt and pepper and cook covered over low heat for another 15 minutes.
  8. Then, add the pasta and stir to integrate all the ingredients.
  9. Serve and garnish with parsley leaves.
