SPAGHETTI WITH LEMON MUSHROOMS AND GREEN BEANS

INGREDIENTS

  • 200 g of La Moderna® Spaghetti
  • 1 tablespoon of olive oil
  • 2 tablespoons of unsalted butter
  • 2 garlic cloves, sliced
  • 1 large portobello mushroom, thinly sliced
  • 1 1/2 cups of green beans, cleaned, halved, and blanched
  • 1 epazote leaf, washed, disinfected, and chopped
  • A pinch of salt and black pepper
  • 3 tablespoons of lemon juice
  • 1 teaspoon of sugar

PREPARATION

  1. Cook the pasta according to the package instructions.
  2. Drain and set aside.
  3. Heat the oil in a pan and melt the butter, add the garlic along with the mushroom slices and green beans.
  4. Constantly sauté until the mushrooms soften.
  5. Increase the flavor with epazote, salt, and pepper.
  6. Add the lemon juice and sugar.
  7. Stir well and cook until the liquid reduces.
  8. Add the pasta, stir well and cook for one minute to incorporate the flavors.
  9. Serve hot and enjoy.
