PENNE WITH TURKEY CUBES AND SPINACH SAUCE

For the sauce

  • 3 cups of spinach, washed and disinfected
  • 1 garlic clove
  • 1 cup unsalted cottage cheese or jocoque
  • 1 seedless lemon (juice)

For the pasta

  • 200 g La Moderna® Penne pasta
  • 2 cups of large cubed turkey breast ham
  • 1/2 cup skin-on and toasted almond halves
  • A pinch of salt and ground black pepper
  • 2 tablespoons grated parmesan cheese

For the sauce

  1. 1 Place half of the spinach and the rest of the ingredients in your food processor and process until you achieve a smooth and homogeneous sauce.
  2. 2 If necessary, add a couple of tablespoons of water.

For the pasta

  1. Heat the water with salt in a tall pot until it boils.
  2. Immediately add the La Moderna® Penne pasta and cook until it is al dente (soft on the outside and firm on the inside).
  3. Check the cooking times marked on the package.
  4. Drain the pasta once ready and return it to the same pot.
  5. Add the sauce along with the remaining spinach and mix until the leaves soften from the remaining heat.
  6. Add the turkey cubes, almonds, salt, and pepper.
  7. Mix again to incorporate the flavors.
  8. Serve immediately and sprinkle with parmesan cheese.
  9. Enjoy!
