For the sauce
- 3 cups of spinach, washed and disinfected
- 1 garlic clove
- 1 cup unsalted cottage cheese or jocoque
- 1 seedless lemon (juice)
For the pasta
- 200 g La Moderna® Penne pasta
- 2 cups of large cubed turkey breast ham
- 1/2 cup skin-on and toasted almond halves
- A pinch of salt and ground black pepper
- 2 tablespoons grated parmesan cheese
For the sauce
- 1 Place half of the spinach and the rest of the ingredients in your food processor and process until you achieve a smooth and homogeneous sauce.
- 2 If necessary, add a couple of tablespoons of water.
For the pasta
- Heat the water with salt in a tall pot until it boils.
- Immediately add the La Moderna® Penne pasta and cook until it is al dente (soft on the outside and firm on the inside).
- Check the cooking times marked on the package.
- Drain the pasta once ready and return it to the same pot.
- Add the sauce along with the remaining spinach and mix until the leaves soften from the remaining heat.
- Add the turkey cubes, almonds, salt, and pepper.
- Mix again to incorporate the flavors.
- Serve immediately and sprinkle with parmesan cheese.
