Dry noodle with black bean and morita sauce

For the sauce

  • 1/4 onion
  • 1 garlic clove
  • 1 tomato, roasted and quartered
  • 1/2 cup whole bay beans, cooked in salted water
  • 1 cup bean broth
  • 1 morita chili, roasted and hydrated
  • A pinch of salt and black pepper


For the noodle

  • 1 tablespoon canola oil
  • 200 g of Fideo No.1 La Moderna®
  • 3 cups of water
  • 4 teaspoons of low-fat cream
  • 1/2 avocado, sliced
  • 1/2 cup pork cracklings, chopped
  • For the sauce
  • 1Place all the ingredients in the blender jar and process until smooth and homogeneous; reserve.


For the noodle

  1. Heat the oil in a pot over medium heat, add Fideo No.1 La Moderna® and cook, stirring occasionally, without letting it change color.
  2. Add the water and boil over low heat for 10 to 12 minutes or until the water is almost completely reduced and the noodle softens.
  3. Add the bean sauce once the time has elapsed and continue cooking until the pasta absorbs the sauce and has a heavy consistency.
  4. Serve hot and decorate with the remaining ingredients.
