For the mushrooms

  • 2 cups sliced mushrooms
  • 2 tablespoons olive oil
  • Garlic powder
  • Salt and pepper to taste
  • Parsley leaves

For the pasta

  • 200 g of La Moderna® Spaghetti
  • 3 eggs
  • 1/2 cup grated Parmesan cheese (125 g)
  • 3/4 cup cubed bacon
  • 1/2 cup heavy cream
  • 1 cup grated Manchego cheese
  • 1 1/2 cups shredded turkey
  • 1/2 cup cranberries plus 2 tablespoons for serving
  • 1/4 chopped onion
  • 1 minced garlic clove
  • Salt and pepper to taste


  1. Cook the pasta according to package instructions.
  2. Drain and set aside.
  3. In a bowl, mix the eggs and Parmesan cheese.
  4. Heat a large skillet and cook the bacon, then add the La Moderna® Spaghetti.
  5. Remove from heat and add the egg mixture, cream, Manchego cheese, onion, garlic, salt, and pepper.
  6. Add the shredded turkey and cranberries.
  7. Prepare a round baking dish lined with parchment paper on all sides.
  8. Add the pasta, flatten with a spoon, and bake at 200°C for 35 minutes or until the surface is golden brown.
  9. Remove from the oven, allow to cool and unmold.
  10. Sauté the mushrooms in the oil until they brown, add garlic and garnish on top with mushrooms, chopped parsley, and a little more cranberries.
