INGREDIENTS
For the mushrooms
- 2 cups sliced mushrooms
- 2 tablespoons olive oil
- Garlic powder
- Salt and pepper to taste
- Parsley leaves
For the pasta
- 200 g of La Moderna® Spaghetti
- 3 eggs
- 1/2 cup grated Parmesan cheese (125 g)
- 3/4 cup cubed bacon
- 1/2 cup heavy cream
- 1 cup grated Manchego cheese
- 1 1/2 cups shredded turkey
- 1/2 cup cranberries plus 2 tablespoons for serving
- 1/4 chopped onion
- 1 minced garlic clove
- Salt and pepper to taste
PREPARATION
- Cook the pasta according to package instructions.
- Drain and set aside.
- In a bowl, mix the eggs and Parmesan cheese.
- Heat a large skillet and cook the bacon, then add the La Moderna® Spaghetti.
- Remove from heat and add the egg mixture, cream, Manchego cheese, onion, garlic, salt, and pepper.
- Add the shredded turkey and cranberries.
- Prepare a round baking dish lined with parchment paper on all sides.
- Add the pasta, flatten with a spoon, and bake at 200°C for 35 minutes or until the surface is golden brown.
- Remove from the oven, allow to cool and unmold.
- Sauté the mushrooms in the oil until they brown, add garlic and garnish on top with mushrooms, chopped parsley, and a little more cranberries.
