INGREDIENTS
- 200 g of La Moderna® Gears pasta.
- 3 tbsp of vegetable oil.
- 2 garlic cloves, finely chopped.
- 1/4 finely chopped onion.
- 200 g of Nile whitefish or similar, in large cubes.
- 1/4 cup of corn kernels.
- 2 small diced carrots.
- 1/2 small diced potato (with skin).
- 1 small diced zucchini.
- 1 small diced celery stalk.
- 5 1/2 cups of unsalted vegetable broth.
- A pinch of salt and pepper.
- 2 sprigs of thyme.
- 2 bay leaves.
INSTRUCTIONS
- Heat the oil for a minute in a pot over high heat.
- Add the garlic and sauté the onion.
- Add the corn kernels and stir until they turn golden brown.
- 4Add the carrots and potato, stir occasionally for two minutes to soften.
- Add the zucchini and celery and cook for one more minute.
- Pour in the broth, reduce the heat and season with salt, pepper, thyme and bay leaves.
- Cover the pot and let it simmer for 10 minutes.
- In a separate pan, lightly brown the La Moderna® Gears pasta with a tablespoon of oil.
- Add the La Moderna® Engrane pasta to the pot and cook for another eight minutes over high heat.
- Add the fish cubes halfway through the pasta cooking time and cook until they change color and become firm.
- Serve the hot soup and enjoy immediately.
