Creamy chipotle chicken pasta

Ingredients

2 packages of 200 g La Moderna® Spiral pasta
4 L of water
4 cups of chicken breast cubes
2 tbsp of oil
2 cups of spinach leaves
3 boiled tomatoes
1/4 onion
1 garlic clove
1 cup of cream
1 tbsp of adobo sauce chipotle paste
150 g of grated manchego cheese
Salt and pepper to taste

Instructions

Step 1 Boil the water and cook the La Moderna® Spiral pasta according to package instructions.
Step 2 Drain and add a tablespoon of olive oil. Mix and set aside.
Step 3 Drain and set aside.
Step 4 Season the chicken with salt and pepper and sear with the oil in a pan. Cook for 5 minutes.
Step 5 Add the spinach and sauté for 3 minutes. Set aside.
Step 6 Blend the tomatoes with onion, garlic, cream, and chipotle.
Step 7 Strain and pour over the chicken with spinach, adjust seasoning and cook for 5 minutes.
Step 8 Add the pasta, mix and cook for another 5 minutes.
Step 9 Serve and sprinkle with cheese.
